CHOCOLATE, EXPLOSION!!! That is all I have to say about that! I would say these are a must try, and they will totally give you bragging rights at your upcoming family gathering! I will definitely make these again, and SOON!
INGREDIENTS
1 c. unsweetened cocoa powder
2 c. all-purpose flour (unbleached)
1.5 tsp baking powder
1/4 tsp salt
1/3 c. butter (softened)
1 1/2 c. white sugar
2 tsp vanilla
4 large eggs
1/2 c. powdered sugar
INSTRUCTIONS
Combine cocoa powder, flour, baking powder, and salt in a medium bowl. Set it aside.
Combine butter, sugar, and vanilla in a large bowl and beat with a fork until combined, add eggs one at a time, and continue to beat them in until combined. about 10-20 seconds each.
Stir in the dry ingredients with the wet ingredients and mix until incorporated.
Cover the bowl and chill the dough for at least one hour, up to overnight. (Or even a couple days, as I did.)
When you are ready, preheat the oven to 350 F, place the powdered sugar in a medium bowl, roll the dough into tablespoon-sized balls, and cover them well with the powdered sugar!
Place them on a lined baking sheet with enough space between them. Baking them in batches, for 10-15 minutes or until spread and crackled. Cookies will still be soft so you will want to let them cool on the baking sheet for a couple of minutes before moving them to a cool plate!
