Simple Blinchiki! (You Might Call Them Crepes!)




INGREDIENTS

1 1/2 cup milk

1 cup all-purpose flour

2 tsp. granulated sugar

1/4 teaspoon salt

3 Tbsp. unsalted butter, melted 1/2 tsp vanilla - (optional. omit if you are adding savory toppings.)

3 eggs


INSTRUCTIONS

Add milk, flour, sugar, salt, butter, vanilla and eggs to a blender, then blend on low speed until well combined, about 10 seconds. Cover and chill 1 hour (or overnight if you want to prep it for a fast breakfast).

Heat a 10-inch non-stick skillet over medium heat. Gently stir batter with a fork just to blend separated layers. Lightly butter skillet then lift the pan and pour 1/4 cup batter into pan, immediately tilt and swirl pan in circular motion to evenly coat entire bottom portion of pan with batter.

Cook until golden brown brown on bottom, (they should be soft, not crispy) then use a spatula to flip the crepe to opposite side. Cook until golden brown spots appear on bottom.

Transfer to a wire rack. (Setting them on a plate will cause the steam to sit under the blini, making it soggy. A wire rack will allow the air flow to keep it fresh.) Repeat until all of the batter has been used up (if needed reduce burner temperature slightly).

You can fold them half way, and half way again so that they are in fourths, our you can roll them up which is less fancy, but tastes fantastic nonetheless. Dust blini with powdered sugar and roll them up, or fold into fourths. Or you can fill them with your desired fillings, then fold.


TOPPING OPTIONS

We either roll them up as is, cover them in berries, sprinkle powdered sugar over them, and drizzle them in syrup, -OR- butter the inside, lightly sprinkle cinnamon and sugar on the inside, roll them up, and drizzle them in syrup. Some other ideas might include Nutella and diced strawberries, sliced bananas and a caramel sauce, sweet cream cheese and a berry fruit jam, or go the savory route and fill them with ham or bacon, tomatoes, avocado, and eggs! Just remember to omit the sugar and vanilla when you make the batter if you go the savory route! Now have yourself a steaming breakfast, a cup of dark coffee, and open the window so you can listen to the birds while you eat! Enjoy!
