Soz! (Lamb Stew.)

Food is fuel, yes! But some meals are pure comfort! This hearty dish of meat and potatoes is called Soz! (Soze for pronunciation purposes.) It is absolutely DELICIOUS! It is made using lamb. You can use any cut of lamb for this, just be sure the meat is in bite sized pieces prior to cooking. Enjoy!




INGREDIENTS

2 Tbsp butter (or ghee)

2 lbs lamb

Salt & Pepper to taste

1 onion, diced

3 large russet potatoes, washed, cut into 4ths.

3 Tbsp. tomato paste

32 oz. beef broth


INSTRUCTIONS

Prior to frying your lamb, first season it with salt and pepper, stirring to make sure that all the pieces are fully coated in the seasoning. In a large stock pot, over medium heat, fry your lamb in 2 Tbsp. butter (or ghee). After 3-5 minutes, flip over and flip all of the lamb on the other side as well. Dice and add your onion, stirring occasionally. Once the onions are translucent and fragrant, add the cut potatoes, tomato paste, and beef broth into the pot. Allowing the Stew to come to a boil first, turn the heat down to medium-low heat and let simmer (covered) for 15-20 minutes. Season with salt and pepper to taste and enjoy with fresh homemade bread! Enjoy!
