Un-Stuffed Cabbage!

Not sure what to call this dish! The frst thing that came to my ind was "Dirty Rice" but I supposed it is more like a un-stuffed cabbage! Whatever you wat to call it, it is simple, doesn't hinder my health/fitness goals, and it is yummy! Here is what we threw in the pot, but be warned that this recipe made A LOT (like 8-10 servings) so if you want to half it depending on how many people you are cooking for, or maybe use it as a meal prep, feel free to have at it!


**The first thing I did was keep 2 cups of dried beans in 6 cups of water over night, drained and rinsed in the morning, simmered them for 2 hours, and then got started on the rest of this.





INGREDIENTS:

2 lbs. ground beef

taco seasoning (i make my own but you can purchase a package too)

1 onion, sliced

1 1/2 bell peppers, sliced (I used half a red, half an orange, and half a yellow)

3 cloves garlic, diced

8 oz. mushrooms, sliced

1 can diced tomatoes

and that same tomato can filled with water

beans

1 c. rice

3 tbsp. salt

1 tbsp. pepper

1 tsp. garlic powder

1 tsp. onion powder

1 tsp. chili powder

1 tsp. cumin


DIRECTIONS:

Cook the beef on medium heat, adding the seasoning towards the end with just enough water to keep the beef from being dried out. From there I go ahead and add everything else to the pot and simmer it on medium heat, covered for 30 minutes. The water will keep the beef from getting burned to the bottom and the steam in the pot cooks the rice obviously. But you can use beef broth if you prefer! There you have it! Super simple, super delicious! Enjoy!


**You can top your unstuffed peppers with cheese, avocado, cilantro, or sour cream! (I use plain yogurt as a sour cream substitute. Tastes similar, but with more nutritional value! The choice is yours!!)
