Un-Stuffed Peppers!

I've followed so many recipes and done so many versions of stuffed peppers. How this recipe came about was actually a mixture of following a "Stuffed Pepper" Recipe and deciding to dice the peppers instead of stuff them, and prepping a Sloppy Joe recipe and deciding to add some of those seasonings to the meat as it cooked...


So what I am saying is,the first five ingredients are the same and this just makes it so I can whip up 2 pounds of beef and prep dinner (or Lunch) for the next day in advance. (It's a mom hack!) If you plan to make both back to back like I do, you can find the Sloppy Joe recipe here. That's all, carry on!





INGREDIENTS

3 tablespoons olive oil

2 pounds ground beef

1 tablespoon garlic powder

1 tablespoon onion powder

1 tablespoon smoked paprika

Salt and pepper to taste

3 bell peppers, any color

4 tablespoons olive oil, plus more for drizzling 

1 onion, finely diced 

2 cloves garlic, chopped

4 Roma tomatoes, seeded and finely diced  1 cup Prego Sauce

1 cup cooked long-grain and wild rice

1 cup water 

1 cup Cheddar cheese for topping


*Side Note*

If you are making both the Unstuffed Peppers and the Sloppy Joes, use the 2 pounds. If you are only opting for one recipe, use just one. In that case, you will half the seasonings as well but keep the rest of the recipe as is.


INSTRUCTIONS

In a large skillet, add the olive oil and ground beef, sprinkle with the garlic powder, onion powder, paprika, salt and pepper and cook, breaking up with the back of a wooden spoon or potato masher, until the meat is no longer pink, about 5 minutes. Add the garlic, bell peppers and onions and season with salt and pepper. Cook until the vegetables soften, about 5 minutes. Adding the tomatoes (with juices) and the rice, keep it covered. Add a cup of water and keep an eye on the dish as it cooks. You will want the rice to cook through but not let it burn to the bottom of the pan so every once in a while add 1/4 - 1/2 cup of water and mix it as needed. Keep it covered to allow the steam and the water to cook the rice. When the rice is cooked through you can taste and adjust the seasoning. Stir in 1 cup of the cheese. Serve warm and Enjoy!!
