Lemon Blueberry Muffins!

Listen, I hate it when people ramble on and on about what inspired them to make that one delicious treat. I also hate when I have to scroll for days to find the recipe, so let's just jump right into the good stuff!





INGREDIENTS

2 c. all purpose flour

2 tsp. baking powder

1/4 tsp. baking soda

1/4 tsp. salt

3/4 c. sour cream

2/3 c. granulated sugar

1/4 c. lemon juice

Finely grated zest of 1 large lemon

2 large eggs

3/4 tsp. pure almond extract (which can be optional but I highly recommend it! If you don't have it, you can substitute some vanilla if you prefer.)

1/2 c. unsalted butter melted and cooled slightly

1 generous cup of fresh blueberries


Icing (also optional, we always skip icing on all of our pastries but if you are going to ice it, this is a fantastic and quick little icing that you can whip up while the muffins are in the oven.)

3/4 c. powdered sugar (sifted)

1-2 Tbsp. fresh lemon juice

a pinch of lemon zest


INSTRUCTIONS

Preheat your oven to 375 F. Grease a 12 count muffin tin or line each spot with a liner. In a large bowl, combine your flour, baking powder, baking soda, and salt, then set it aside.

In a separate bowl, whisk together sour cream, sugar, lemon juice, lemon zest, eggs, extract, and melted butter until smooth.

You may now combine the wet ingredients over the dry and carefully stir with a rubber spatula until the two mixtures are just combined. (It should be thick and a little lumpy! That's OK, do not over-mix it trying to get out the lumps.) Now carefully fold in your blueberries. Once everything is combined, evenly divide your batter among the muffin cups and bake for 15-18 minutes. (If you are going to use the icing, now is the time to start that.)

A toothpick inserted into the center of a muffin that comes out clean will tell you that they are ready. If it does not come out clean, leave it in a minute or so longer. Once ready, place the pan on a rack to cool for 10 minutes and then remove each muffin to cool completely.


If you are adding the icing, you will simply whisk all of the icing ingredients together until it is smooth and then drizzle it over the cooled muffins! ENJOY!
