Confession! I sometimes buy too many bananas, just so they will go "over-ripe" and I can make banana bread. It is such an easy and simple breakfast, snack, dessert! Not to mention it's so dang simple. I literally make this on a weekly, sometimes biweekly basis. You can too! It is for real, SO simple.
INGREDIENTS
1 stick of butter, melted
1/2 cup white sugar
1/2 cup brown sugar
2 eggs
2 teaspoons vanilla extract
1 1/2 cups all purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup of sour cream or greek yogurt
3 very ripe bananas, mashed with a fork.
INSTRUCTIONS
Preheat oven to 350 F. Grease or spray a 9 inch loaf pan and set it aside. In a large bowl whisk together the melted butter, and sugars. Add the eggs one and a time. (It is suggested that you do this in a separate bowl so that if you come across a bad egg, the batter isn't ruined. It doesn't happen often, but it does happen.) and vanilla extract. Whisk until smooth.
Sprinkle the flour, baking soda and salt over the butter mixture and stir to mix until just combined. Fold in the mashed bananas and sour cream. Pour batter into the prepared pan and bake for 60 minutes until a toothpick (or fork) inserted into the center comes out clean. Cool until warm before serving.
